Leftover rice turns into a fun Breakfast Stir-Fry packed with eggs, vegetables, and breakfast sausage.  It's a deliciously simple breakfast for dinner recipe.

I love stir fry recipes. Don’t you? They’re so easy, customizable, and perfect for any meal. I love them so much I have almost 20 stir-fry recipes on my blog. They range from a more traditional Sweet & Sour Gingered Pork Stir-Fry to ones like Bayou stir fry and chicken Kiev stir fry.

I am a firm believer that stir-fry is just a method of cooking. It doesn’t have to be always Asian flavored. That’s why I have stir fry options like pork piccata stir-fry, Bayou stir fry, and ratatouille stir-fry on my blog. Swap out the ginger, garlic, soy, and other Asian flavors for enchilada sauce and chipotle for a Latin flavored stir-fry. Or try some tomato sauce with Italian sausage and basil for an Italian sausage stir-fry. If you keep the method of cooking – which is quickly cooking thinly sliced bits of meat and veg – then you can change up a basic stir fry recipe into any flavors you want!

Now, let’s talk about stir fry rice. You can use almost any left-over rice you have on hand. This is made with leftover risotto. Which I wouldn’t recommend if you’ve used a lot of Parmesan cheese in your risotto. Maybe you do want to have that Parmesan undertones to your breakfast stir-fry. If not, then make sure you have some plain rice laying around.

This is also an excuse to have Chinese food so you can have that leftover white rice that most people don’t like to eat. I, on the other hand, like the white rice. But I also love any and all kinds of rice. So, there’s that.

Every time we order Chinese food, we get roast pork fried rice. Which is good! Don’t get me wrong, but there’s never enough egg in there for me. I really like the egg in the stir fry. Of course, I’m a bit biased because we had Korean friends growing up. The way they make a stir-fry, or the way they made stir-fry for us, had them pouring the eggs over the rice and not cooking the rice separately.

I really like this method of making stir-fry. It divides the rice out and really flavors the rice with the egg mixture. And since the egg mixture is not just eggs but eggs combined with soy and sesame you really do want to have that goodness divided throughout the stir-fry. However, I went with the traditional method of cooking the eggs first and adding them back in at the end of the cooking.

Since this is a breakfast for dinner theme today, I wanted to make sure the breakfast was represented in this stir-fry. It’s not just egg, but there’s some delicious turkey sausage in there, too. You can use regular sausage, bacon, or even ham for this stir-fry. Use whatever breakfast meat you have on hand.

I know breakfast and veggies don’t typically go hand in hand like this, but in this stir-fry it really does work. Yes. Omelets. But not everyone likes those. I don’t know any, but how else do you have veggies for breakfast if you don’t have an omelet? No. I’m not convinced about breakfast salads. Mmmm! I’ll have a lovely bowl of lettuce and what not for breakfast said no one I know. But a bowl of this stir-fry vegetable goodness? Oh yes please!! Eggs, rice, sausage and Asian flavors together in a bowl for breakfast, lunch, or dinner! I’ll have a large bowl with some chop sticks please!?

And since this is the breakfast for dinner theme, it needs to be hearty enough to have for dinner and not still be hungry. Or get hungry an hour later like you typically do with Chinese food. Why is that? I mean, I’ve heard that quite often, but I’ve not personally experienced that. So, I’m really not sure what that is all about.

You can easily see that this bowl is packed with rice, eggs, and veggies! IF you can make it to the bottom of the bowl, you will be set for the entire day! This recipe is for 2 hearty portions, but you could split this out into 3 recipes if you want to have more food later on that day.

There is a lot of green in that bowl. You could swap out with yellow, red, or orange peppers that are available. I’ve seen white, purple, and brown peppers, too. You could throw in some carrots for a little extra crunch and color.

We use turkey sausage all the time but use regular breakfast sausage if you want. Just make sure it’s cooked beforehand or it could make your stir-fry a bit, dare I say, greasy? You could use some crumbled bacon in there or even diced ham. With Easter around the corner, you might have a lot of leftover ham.

And if you’re doing a meat free option, there’s plenty of breakfast meat alternatives. You could even use a soy chorizo instead of breakfast sausage for a little extra kick in flavors. There’s the Beyond brand of products with their own sausage. I bet that would be good in there, too.

I’ve said it before, and I’ll say it again. Stir fry is just a style of cooking. Take that quick cooking idea and swap our your own veggies, meats, and even eggs if you don’t do real eggs. Use leftover rice, brown rice, risotto if you want. This is just a basic stir fry recipe that I’ve turned into a breakfast version, but turn this into your own breakfast version!

Made with blackberry shortcake coffee this Blackberry Tiramisu tastes perfectly delicious.  The coffee soaked lady fingers have a hint of raspberry liquor.

This post is sponsored in conjunction with #SpringSweetsWeek. I received product samples from sponsor companies to help in the creation of the #SpringSweetsWeek recipes. All opinions are mine alone.

Made with blackberry cobbler coffee this Blackberry Tiramisu tastes perfectly delicious.  The coffee soaked lady fingers have a hint of raspberry liquor.

Initially, this was supposed to be raspberry tiramisu. But then I noticed many others using the raspberry favored coffee. So, I decided to try the blackberry shortcake coffee. And let me tell you it is delicious!

And I’m not just saying that because they sponsored this event. I’m saying that because it really is delicious. At least to me. My husband is a bit more picky and he might not enjoy it as much as I did, but I thoroughly enjoyed it. I even looked forward to cracking open that travel mug when I got to work, too.

Every time I think of coffee I think of tiramisu. I don’t know why. It’s just my Pavlov’s dog reaction to working with coffee. I really should step outside of that and make something else next time I work with Door County. You have to admit that it’s not a bad reaction, though!

I’ve made a few tiramisu recipes for my blog. The tiramisu ingredients are so simple and easy to change out based on the coffee flavor, liquor flavor, and just fillings. There’s a Black Forrest tiramisu parfait and a strawberry tiramisu. I even have a tiramisu ice cream cake on my blog. Oh yeah. It’s SO GOOD!!

This is an easy tiramisu recipe!

Seriously stupid easy. It takes longer to whip up the mascarpone than it does to assemble this tiramisu. It’s dip, place, spread, sprinkle, and repeat. It takes minutes to assemble but makes such a great dessert for a special dinner or holiday dinner. And this tiramisu recipe is light and delicious It’s not a heavy dessert at all which is perfect after an Easter dinner.

Yes, you can make this tiramisu without alcohol!

Simple replace the alcohol with more coffee. You can add in a little blackberry extract for added flavor if you’re worried the coffee doesn’t have enough. If you use frozen berries, you can add in the juice from them thawing. That’s another great way to skip the alcohol in tiramisu.

I love that plate. It’s a Depression Glass pattern from MacBeth Evans called Petalware in the Monax color. I have one in pink, too. It’s always fun to see old glassware in photos for blogs. It makes me smile. For those that don’t know, I’ve written my Master’s thesis on Depression Glass and worked on the business my father has selling antique glassware. And I have a collection of my own glassware in a reference book, too. So, seeing it in photos really does make me smile.

This is what I mean when a dessert like this has such a great table presence! If someone brought a slice of this blackberry tiramisu to me for dessert I’d think I was something special. It just looks so pretty with all the layers. Then there’s the blackberry aroma. Oh so intoxicating! And the flavors of the coffee in the sweet lady fingers combined with the rich, vanilla flavored mascarpone filling. So luxurious.

The trick for me is not complete saturating the cookies. Do not dunk them for more than a few seconds. That was the first mistake I made when I tried to make a tiramisu before. I dunked them in there for a while. I saw all those bubbles coming up thinking I needed to keep dunking them. Do not do this. They will get plenty of flavor if you dunk them for a few seconds.

If you dunk them too long they just turn to mush. Compete mush that makes it difficult to line the pan with. They don’t keep that center layer of cookies that are so good. It makes it difficult to spread the filling if your cookies are mush. There’s many reasons how overly dunked cookies can mess this up.

And you really don’t want to miss those delicious layers! See what you’d miss out on? Of course, for convenience I layered the cookies in line with the pan. You could turn them around the other way which is a little more difficult. And you might have to cut some of the cookies to make it work, but you would have a more traditional tiramisu look if you turned the cookies the other way.

I don’t care which way they’re facing because they taste just the same either way. ABSOLUTELY DELICIOUS! And it’s a great way to use up leftover coffee, if you have any. Though with the new Door County flavors for spring, I doubt you’ll have any leftover.

True story. My parents grounded me for getting a BLT sandwich

There was a group of us that would head to a restaurant every Friday morning before school. We would have breakfast before school. It was harmless enough! I would always get a BLT because they had THE BEST BLT sandwich.

Lobster Roll BLT is a delicious mash up of both sandwiches! Broiled lobster is tossed with mayonnaise, lemon juice, and green onions and tops lettuce and tomato before being topped with bacon. It’s a deliciously smoky and sweet sandwich that is irresistible.

Okay. It wasn’t because of the BLT. I didn’t think leaving the house early was considered sneaking out, but they saw it differently. They said I was sneaking out on Fridays. To do what? Have breakfast with my friends? Guilty as charged. Sometimes my parents really didn’t make sense.

The history of the BLT is varied. Some attribute it to finger sandwiches from English tea while some claim diners and World War II for the popularity of this American staple sandwich. Either way, the versions of this sandwich are as varied as its history.

What’s a BLAT?

We all know that BLT is the bacon, lettuce, and tomato we know, but there are a few popular variations on this classic sandwich:

  • BLAT – Bacon, lettuce, avocado, and tomato
  • BLAST – Bacon, lettuce, avocado, shrimp, and tomato
  • BLET – Bacon, lettuce, egg, and tomato
  • BLTT – Bacon, lettuce, turkey, and tomato. Sometimes this one has blue cheese, but that’s mainly in Tennessee. Wouldn’t that be a BLTBCT?
  • BLOFT – Bacon, lettuce, caramelized onions, Feta cheese, and tomato
Salmon BLT – This is one is kind of obvious with the salmon there. It should be a BLST
  • BLFGT – Bacon, lettuce, and Fried green tomato

Lobster Roll BLT is a delicious mash up of both sandwiches! Broiled lobster is tossed with mayonnaise, lemon juice, and green onions and tops lettuce and tomato before being topped with bacon. It’s a deliciously smoky and sweet sandwich that is irresistible.

This last one is a creation of mine. Which is oh so delicious! It was inspired by a sandwich I had a cute little care just south of where I live. The hubs and I were antiquing around the are and stumbled on this cute café. I needed to eat, and it was the only place there to grab a bite in the area we were in. They had a fried green tomato BLT on the menu, which was good, but not what I thought. So, I took the idea and made it what I wanted it to taste like. And thus the BLFGT was born.

Last year we had an egg salad event. Of course, I had to kick mine up and add I some BLT goodness! So, I created the BLT Egg Salad Sandwich. And then there’s the BLTS which is the bacon lettuce and tomato scallop salad. It was inspired by a BLT bread salad I made a decade ago.

Man.  Have I really been blogging that long?

When this theme of the BLT came up, I knew I had to kick up a sandwich into something completely irresistible. And, well, since truffles weren’t readily available, I thought of the next best thing. LOBSTAH!

After my butter poached lobster grilled and smoked gouda grilled cheese, I couldn’t resist putting these delicious crustaceans on a BLT sandwich. But I didn’t want to just throw the lobsters on the sandwich. Then I thought about epic lobster sandwiches and then it hit me.

LOBSTER ROLL!

I’ve only had one lobster roll ever in my life. And it was at some DC food and wine festival on Pennsylvania Avenue. Don’t ask me what it was. I can’t remember. I just remember it was NOT the one where I almost passed out from hypoglycemia. That’s a whole other story.

I was not overly impressed with the sandwich. It was okay. I didn’t think there was enough lobster in there. So, I started looking for authentic lobster rolls and it’s ALL lobster so I’m not sure what I really had that day. And I was hoping to get to Boston this summer and try an authentic one, but with all that’s going on we’re not going to make it.

So, I thought, “What better way to try my hand at a lobster roll then to add it to a BLT?”

And you know what? This is addictively delicious. I know I say that a lot, but even the hubs said it was REALLY good! Which he doesn’t say all that much, so it must super yummy! I broiled the lobster which is sweet and delicious, the bacon is smoky good, and the tomatoes are perfectly ripe. It all came together on some lightly toasted sourdough bread (or pick whatever bread you want) to bring all the flavors I check.

I served ours with some fries. Feel free to use some hand cut or kettle chips. It’s perfect for lunch but also hearty enough for dinner. With all the bacon, lobster, and tomato it’s packed!

I made two recipes for this theme this week. What can I say? Sometimes I’m an over achiever? Yeah, on rare occasions I make more than one recipe for an event or a theme. I had the idea for a breakfast grilled cheese that had eggs, cheese, and sausage on it. I made that one. It might show up on the blog later this month since it’s National Grilled Cheese month.

Then I was getting ready to make myself breakfast and considered making me a small batch of pancakes. Because, well, I’m working at home right now. Actually, I’m taking a TON of free training this month and I’m super excited about that.

So, I was standing there debating about making pancakes or a sandwich. I knew there was pancake mix in the pantry for another recipe I made. Those easy peanut butter pancakes were OH SO delicious. I hope you try that recipe AND this one while we’re all stuck at home right now.

So, pancakes or sandwich? Pancakes or sandwich? I really didn’t want to pick one over the other. I thought about making pancakes with eggs. And it just sort of smacked me in the head like a V8 moment.

Why not a pancake sandwich??

I mean, why can’t pancakes be breakfast sandwich bread? I don’t see why not. It’s like a bread, it holds it’s shape, and it holds the sandwich ingredients in. You can pick them up and don’t have to eat pancakes with a fork. You can make French toast grilled cheese, too, but French toast is bread so that makes more sense than pancakes as a grilled cheese bread.

Since it’s Grilled Cheese Month, I am always trying to think of creative grilled cheese recipes. And I think I did just that. This is one of those breakfast grilled cheese sandwich recipes where you’re going to have that V8 moment, too. “Why didn’t I think of that?” is what you’re saying right about now.

And I was the same as you. I didn’t think of a breakfast pancake grilled cheese among the breakfast ideas or even among the breakfast sandwich ideas. And I most definitely did not put two and two together with this as even a grilled cheese idea.

But now that I have, you’re saying to yourself, “This really does make sense. And it looks SO GOOD!” So, just go ahead and add some pancake mix and ham to your grocery list. I’m pretty sure you have some cheese and eggs you can use. Those are a staple in most kitchens.

Is grilled cheese a breakfast food?

I don’t see why not. We have lots of breakfast sandwiches out there on muffins, croissants, waffles, biscuits. Why not use pancakes? I mean isn’t there one at McDonalds? Don’t have they McGriddle? So, it only makes sense to expand the side of the pancake and make a full-on sandwich out of it.

And you can easy change this up and make your grilled cheese with egg and bacon, sausage, or one of those Beyond Meat choices. Fry the egg or make a scrambled egg. Heck even poach the egg if you want! Though it might be a bit messy if you didn’t make it a jammy egg. Swap out any cheese you want.

Breakfast pancake grilled cheese sandwiches are not only a good idea, but they’re ones of those great breakfast ideas without bread! And since we don’t eat a lot of bread ours has a tendency to get moldy and stale in the pantry if we don’t use it up within the week or so. That means when I do go to use the bread for breakfast, lunch, or even dinner, it’s past it’s prime. This is a recipe you can whip even without the pancake mix! But pick your favorite pancake recipe and scale it down to have just enough pancakes for your sandwiches.

You see what I mean about not overcooking your egg? Or under cooking for that matter. When you put the egg back on the sandwich you don’t want it to get dry. Which is why I chose a fried egg and not scrambled one. However, you could soft scramble your eggs, so they finish cooking while the grilled cheese cooks.

You can see the layer of ham in there and the cheese both top and bottom. I had Provolone, on hand, but I would have preferred some Cheddar or even a Colby or Monterey Jack. But I know we can’t be choosy with the cheese when we’re shopping lately. Heck just grab some American if you want. It’s your sandwich so make it how you want and make it with what you easily have on hand.

Yes, sometimes pancakes can be big. I heard you comment on that. These were a little bigger than I anticipated, but you can easily keep the size down and only put a small amount on your griddle or in your skillet. Think something between a short stack and dollar pancakes. That would be the perfect size for a breakfast pancake grilled cheese.

OH MY! I just thought about. If you make the dollar size pancakes you can call them breakfast pancake grilled cheese sliders! That’s such a genius idea. Grilled cheese sliders on it’s own is a genius idea! You’ll probably be seeing that on the blog sometime soon. And you’ll be seeing the other breakfast grilled cheese sandwich on the blog soon, too. It’s grilled cheese month so I’ll be sharing them ALL!

And speaking of which, there’s a list of all of them on my blog at the bottom of the post. Make sure you check those out for some inspirational lunch ideas!

Breakfast Pancake Grilled Cheese

Yield: 2
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Breakfast Pancake Grilled Cheese skips traditional bread or buns and uses pancakes to hold the fried egg, cheese, and ham together.  It's a fun and delicious breakfast sandwich you can easily make ahead.

Ingredients

  • 1 cup pancake mix (I used Bisquick)
  • 1/2 cup milk
  • 4 large eggs, divided
  • 4 tablespoons butter
  • 3 ounces Cheddar cheese, sliced
  • 3 ounces ham, sliced

Instructions

    1. Combine the pancake mix with the milk and 2 large eggs. Stir until just combined.
    2. Heat a non-stick skillet over medium heat. Swirl one tablespoon of the butter into the pan.
    3. Pour 1/4 cup of the pancake mix and cook 3 to 4 minutes or until the edges are dry. Turn the pancake over and cook an additional 3 to 4 minutes or until golden brown. Remove to a plate, top with a clean kitchen towel, and keep warm.
    4. Repeat with remaining batter and 1 tablespoon of butter.
    5. Swirl one tablespoon of butter into the pan and cook the eggs to just under your liking. You do not want to overcook the eggs and have them be dry on the sandwich.
    6. Spread the remaining butter on the pancakes. Turn the pancakes over and top with cheese, eggs, ham, cheese, and the top pancake.
    7. Cook the sandwiches 3 to 4 minutes a side or until the cheese is melted.
      Slice and serve!

I have had a version of this slow cooker chicken recipe on the menu for many years now. Ever since the slow cooker Tuscan cheese steaks hit the blog, to be honest. Yes, I do realize that’s six years. It’s one that I’ve been tweaking and working on at least once a month or every other month for 6 years.

It’s not because those other Tuscan chicken recipes were not good. They were delicious, but always needing something to be adjusted. A slight increase in Tuscan spice mix here, some more vegetables or tomatoes there. Just a little bit of tweaking. You know what I mean?

In all honesty, it started with those sun-dried tomatoes. You see, they’re not the kind in oil. They’re just dried in a pouch. Which means that they absorb all the flavors of the broth and become sweet and tart little gems throughout the dish.

At the last minute, I decided OT add the rest of a jar of sliced kalamata olives and a couple of tablespoons of capers. With all that sweet and creamy goodness in this Tuscan flavored chicken recipe I thought a little salt and brine would add a nice bite.

I don’t know about you, but I love me some simple chicken recipes. You know the kind with a few, uncomplicated ingredients, takes very little time to prepare, and taste amazing. Well, this is one of those recipes. Not only that, but it’s a delicious garlic chicken recipe to celebrate National Garlic Day which is tomorrow.

We are celebrating all things garlic for National Garlic Day today!

When we selected this theme, I knew I wanted to make a creamy garlic chicken recipe. And while I was making the menu, I saw the Tuscan chicken pop up there again and decided to make this a slow cooker Tuscan garlic chicken recipe.

And since we use the sun-dried tomatoes that are in a pouch and not in oil, and a little bit of cream just for richness, this is a healthy sun-dried tomato chicken. So, you can serve it to you family once every month of so and they’ll devour it every time you make it.

I know because we devour it every time I’ve made it.

During times like this it’s great to have an arsenal of quick and easy chicken recipes. Especially ones that call for other cuts of chicken. I don’t know about you, but chicken breasts are not the easiest things in the world to find right now. So, I appreciate the thighs in this recipe. Not to mention thighs work better in the slow cooker than breasts any way. Breasts just dry out in my opinion.

I did not realize that I have over 30 slow cooker recipes on my blog. They range from slow cooker NC pulled chicken to Russian chicken meatball soup to even a pepperoni pizza bread and sourdough bread. That is quite a range of recipes! All of them are listed at the bottom of this post. Feel free to check some of them out while you’re here.

Our slow cooker is in almost every week. Sometimes in the summer we grill more, but it’s used a few times every month. I’m not one that keeps it just for winter months. Who doesn’t love to throw some ingredients in there, leave it to smell the house up with it’s amazing aroma, and then sit down to a somewhat effortless meal.

I’m not going to go so far as to say that this is one of the best chicken slow cooker recipes ever on my blog. However, it is tops on my list as far as chicken recipes go. I’m still partial to pot roasts in the slow cooker, but that’s just me. I really should make and share one because I just realized I don’t have a slow cooker pot roast recipe on here. No sure how I missed that.

However, I will say that this is an easy creamy garlic chicken recipe. You can brown the thighs if you want. You’re choice. That adds a little extra effort on your part. This can easily be converted to an Instant Pot or electronic pressure cooker recipe. Those are in the notes section. It’s just as easy in there, too.

In fact, that’s how I made it the last time. I spaced on putting the ingredients in the slow cooker and whipped it up as a pressure cooker recipe when I got home from work. It’s a good thing to able to make this either way in case you’re like me and totally space in the mornings. Just been on of those years, you know?

Either way you cook it up, it’s delicious. Rich and creamy with so much flavor. And the thighs are perfectly tender and full of flavor. I cannot wait to serve this up again. I have thighs in the fridge. Hmm…

Slow Cooker Tuscan Garlic Chicken

Yield: 6 servings
Cook Time: 8 hours
Additional Time: 10 minutes
Total Time: 8 hours 10 minutes

Slow Cooker Tuscan Garlic Chicken is creamy, full of garlic
and tomato flavors, and perfect for any night of the week.  It’s a recipe that’s on our menu at least
once a month.

Ingredients

  • 2 pounds boneless chicken thighs
  • 2 tablespoons Tuscan spice mix
  • 1 teaspoon garlic salt
  • 1/2 teaspoon black pepper
  • 10.5 ounces cream of chicken soup
  • .87 ounce packet chicken gravy mix
  • .75 ounce packet mushroom gravy mix
  • 1/2 cup milk
  • 1/4 cup chopped garlic
  • 1 cup dry white wine
  • 3 ounces chopped sun-dried tomatoes (I used the Bella San Luci in the pouch, not in oil)
  • 1 cup thinly sliced onions
  • 1 cup thinly sliced red bell pepper
  • 1/2 cup chopped kalamata olives
  • 2 tablespoons capers, drained
  • 1 cup cream (or milk)
  • 1 1/2 tablespoons flour

Instructions

    1. Sprinkle thighs with the spice mix, garlic salt, and black pepper. Set aside.
    2. Combine the cream of chicken soup with the gravy mixes and the milk. Set aside.
    3. Browning the chicken is optional but does make for deliciously rich sauce. If you decide to brown them, make sure you cook the garlic 1 to minutes and use the wine to deglaze the pan.
    4. Place the thighs in the slow cooker (optional instructions for pressure cooker in Notes section).
    5. Combine the garlic with the wine and pour the mixture (or the juices from deglazing the pan) into the slow cooker.
    6. Sprinkle the tomatoes, onions, peppers, olives, and capers over the chicken and drizzle with the soup mixture.
    7. Cook on low 8 to 10 hours (or high 5 to 7) or until the thighs are fork tender.
    8. If cooking on low, turn the heat to high.
    9. Combine the cream with the flour stirring with a whisk to prevent lumps.
    10. Pour the cream mixture into the slow cooker, stir, and continue cooking until thickened.
    11. Serve over noodles, polenta, rice, or even mashed potatoes.

Notes

For the pressure cooker:

Set your cooker to brown. Add 1 tablespoon olive oil to the liner and brown the chicken on both sides.
Add the wine, and garlic and cook 1 to minutes.

Sprinkle the vegetables, olives, and capers over the chicken and drizzle the soup mixture over top.
Turn the valve to pressure cook and set it to high for 15 minutes. Allow the pressure to naturally release.
Set the cooker to brown again and cook until boiling.
